Since I have been posting so sporadically lately.....and photo heavy posts, at that...I thought I would share my most favorite pie recipe with y'all.
My Momma was from Mississippi, and every time Granny and Uncle George came up for Christmas they would bring a couple brown paper grocery bags full of pecans, from a tree in Granny yard. I have fond memories of sitting around the dining room table, as a small girl...listening to the adults, catch up with the goings on in their lives, the happiness and the laughter they shared, all the while crackin' and shellin' those delicious nuts. Seems a whole lifetime ago....
So obviously, my favorite pie is Pecan! Not just any ole' pecan pie....caramel pecan pie! You should make it, it is easy and soooo delish...takes me way back, to those good ole' days!
Caramel Pecan Pie
(Preheat oven to 350°)
36 caramels, unwrapped
1/4 cup water
1/4 cup butter, cubed
3 eggs
3/4 cup sugar
1 tsp. vanilla
1/8 tsp. salt
1 1/3 cup chopped pecans
1 unbaked deep dish pastry shell (9 inches)
In a small heavy saucepan, combine the caramels, water and butter. Cook and stir over low heat until caramels are melted. Remove from heat and set aside. In a small mixing bowl, beat eggs, sugar, vanilla and salt until smooth. Gradually add caramel mixture. Stir in chopped pecans. Pour into pastry shell. If, desired arrange pecan halves over filling. Bake for 35 to 40 minutes or until set. Cool on a wire rack. Refrigerator left over.
