The comfort of Home!

I love being a home body! There is no place better to be for me! Surrounded by my family and my dogs. With the weather turning colder, I really enjoy cooking. I don't cook much in the summer but the first day of cool weather and I hit the floor running! So I thought I would share a couple of recipes with you. My Mother-in-Law makes the best chicken soup. I know it isn't a hard recipe but this soup, this soup...taste like home! I love it. She doesn't measure so I did my best in typing it out...and I found the easiest/best carrot cake recipe on line. I hope you enjoy them as much as I do!

Sharon's Homemade Chicken Soup
3 chicken breast
2-3 cup water
a celery stalk, trimmed and cut in half
poultry seasoning to taste
2-3 cups chicken broth
eggs noodles
In a large pot, boil chicken breast in water and add celery sticks and poultry seasoning. Remove celery and chicken, discard celery. Once cooled some, tear chicken apart with fingers into bite sized pieces. Add chicken broth and noodles to water and cook (check time indicated on noodle bag).
**I used Reames noodles but Sharon used an Amish pasta found on the dry pasta aisle.


THE BEST CARROT CAKE
1 1/2 cup salad oil
2 cup sugar
4 eggs
1 tsp. salt
2 tsp. soda
2 tsp. baking powder
2 tsp. cinnamon
2 cup flour
3 cup grated carrots
1 cup chopped walnuts
Blend oil with sugar. Mix salt, soda, baking powder and cinnamon with flour. Add to sugar mixture. Add carrots and nuts. Bake at 300 degrees for 50 to 60 minutes or until a toothpick inserted comes out clean. Cool. Frost with cream cheese frosting below.
FROSTING:
1 (8 oz.) pkg. softened cream cheese
1/2 cup butter, softened
2 tsp. vanilla
1 box powdered sugar
Blend all ingredients with mixer until creamy.
